Job Description:

PURPOSE

The Sous Chef acts as the primary manager in the Kitchen in the absence of the Chef de Cuisine. Develops Snoqualmie Culinary Team through hiring and training. Perform as a Team Player demonstrating leadership, coaching, and organizational skills on a day-to-day basis. Creates a motivational environment, by being approachable and available to management and team members. Encourages give and take, and constructive suggestions. Involve Team when setting objectives. Models behavior expected from Team Members. Keeps Team Members informed on immediate direction or plans.

ESSENTIAL DUTIES / RESPONSIBILITIES

* Responsible for all back of house food operations for Vista.

* Maintain active and current communication with outlet manager.

* Provide reports regarding performance of that venue to the Executive Sous Chef and Executive Chef.

* Practice and enforce company policies and procedures.

* Responsible for the supervision and training of Lead Cooks.

* Assisting the Chef de Cuisine in menu development and implementation.

* Schedule regular staff meetings with meaningful training agenda.

* Finish administrative tasks, reports and team member evaluations in a timely fashion.

* Responsible for monitoring purchases, product specifications, quality and rotation of food products; end of month inventories, waste control procedures, menu development, quality food preparation and presentation.

* Enforce proper food handling procedures by all personnel in the prescribed safe and sanitary manner.

* Responsible for financial performance of the Fine Dining kitchen to include labor, and food costs and controllable expenses.

* Responsible for assisting the Executive Sous Chef and Executive Chef in creating, developing and implementing and effective strategy and organization needs within the Vista Kitchen to meet current objective and plan for future growth.

* Responsible for overall kitchen safety, cleanliness and sanitation as prescribed by Snoqualmie Casino Standards.

* The overall appearance and maintenance of fixed kitchen equipment and rolling catering equipment.

* Other duties as assigned.

Education and Experience :

* High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).

* Five (5) years of culinary experience coupled with at least two (2) years experience as Supervisor or Sous Chef, or two (2) years venue specific employment.

* All experience must run concurrently with no significant gaps, and must be current within six (6) months of the application for employment.
